Healthy BLT

Warm toasted wholemeal bread sandwich filled with bacon, lettuce, tomato and mustard creme fraiche

Preparation time: 5 minutes

8 slices wholemeal bread
8 rashers of lower salt bacon
4 medium tomatoes
1 bag mixed lettuce
2 tablespoons of low fat creme fraiche
2 teaspoons of Wholegrain mustard
1 bag root vegetable crisps

  1. Pre heat the grill
  2. Mix the low fat creme fraiche with the wholegrain mustard and set to one side
  3. Slice each tomato into 6 slices
  4. Grill the bacon on one side until crispy, turn over and cover each rasher with 3 slices of tomato. Grill for 2 minutes
  5. Toast the bread and spread with the mustard creme fraiche
  6. Place 2 rashers of bacon and tomato each on 4 slices of toast
  7. Top with lettuce and the other 4 slices of toast cut each sandwich into 4 triangles and garnish with lettuce and root vegetable crisps
